Hiya...so how long do I soak various nuts? I heard 6 hours for cashews..with a bit of sea salt. I've been soaking the almonds overnight. Will I mess it up if I soak a certain nut too long?

Thanks in advance.

Depends on why you are soaking them. What goal are you looking to achieve?

Just trying to get them "alive" again..with the enzymes.

In that case I would not add anything at all, salt will inhibit the sproting response which is what you are looking for.

I always soak my raw nuts (and pumpkin seeds)
and I fully agree with James, just filtered water no salt as that would draw out any moisture in the nuts and inhibit germinaton > I like to 2/3 fill a mason jar with almonds and top it off with water > into the fridge overnight. yum they are always crispy even when soaked a few days.

I heard somewhere that you should not soak cashews > does anyone know anything about this and why? > I can't find any internet info about it and am curious.

I find cashews to be a quick soaker - they soften in 15-20 minutes but can take longer soaks as well. There are a variety of opinions on how long nuts should be soaked, so you can consult various charts, like the link below. From my experience, almonds and walnuts benefit from at least 8 hours, and the walnuts lose their astringency with repeated rinsing after the soaking. I tend to blanch almonds (a raw food no-no, i know) because in my opinion the tannins in the skin are worse for you than 3 seconds of boiling water.

A small amount of lemon juice will tend to curdle the tannins and make them indigestible.

THis is from the FAQ at www.westonaprice.org:

                    Q. When soaking nuts, why is the salt needed?

                    A. The salt helps activate enzymes that de-activate the enzyme inhibitors. For grains, we soak in an acidic solution to get rid of phytic acid. Nuts do not contain much phytic acid but do contain high levels of enzyme inhibitors. The method imitates the way the native peoples in Central America treated their nuts and seeds--by soaking them in seawater and then dehydrating them.

                    Q. Should I consume only raw foods so I don’t kill the enzymes?

                    A. What the enzymes do is help digestion in the upper stomach, where there are no digestive fluids. But most foods are not good sources of enzymes. You need to lacto-ferment the foods to get a lot of enzymes. So the lacto-fermented foods eaten with cooked foods more than compensate for the loss of any enzymes in the food you cooked. Lacto-fermented foods are 'super-raw' foods. Lacto-fermented foods also provide lactic acid and good bacteria, which do survive the digestive process.

The Alive in 5 uncookbook says to soak raw cashews, but doesn't say how long? It's to make Nut Berry Yogurt. Any advice would be much appreciated!

      Thanks!
